I seasoned them just like it said in the instructions and used olive oil in cooking with them . The first time I used both the large and small saute pans and washed them the nonstick coating started flaking off. Plus they weren't nonstick. I've had Greenpans for months and have suffered none of the problems reported by joeb. I've found that if you care for your cookware it serves you well - especially if it doesn't contain PTFE !
